With the goal of offering local cuisine, we use local producers and suppliers. We believe in our own. These partnerships allow us to be more sustainable and to significantly minimise CO2 emissions. To do this, we take care of the materials we use and suitably treat any waste we generate.
We are committed to organic, local and seasonal ingredients, cooking with and discovering their wealth while paying fair prices for them. By consuming locally-sourced products, we know which hands have worked the land. We want to show our love for the land and the people who work it.

2. WE WORK WITH NUTRITIONS AND HEALTHY GASTRONOMIC PROPOSAL
Direct from our kitchen, our culinary director, M. Dardouchi, advocates a return to origins, offering minimally invasive cuisine that respects product quality. The food coming out of our kitchens oozes with essence and the mastery of cooking technique.

3. WE REDUCE FOOD WASTE
We are very aware of food waste. This is why, from our kitchens, we focus from the start on the management and handling of food, and carefully monitor it in the pre- and post-event phases.
We want to contribute to the 14% reduction of waste generated in Europe in terms of hospitality and catering, and to work in line with the European Parliament resolution of 19 January 2012.
